Peaches & Oatmeal Cream Pies

Well, I didn't get a chance to do a post for the dessert challenge last month. I totally made a delicious dessert but with all the traveling out of town I didn't get around to posting it. I had a hard time thinking up something to make with the ingredients for this month: peaches and cream. This Peaches and Cream Torte I have on my blog would have been perfect if I hadn't already made it, but the rules state it has to be a recipe that I haven't posted before. That's what I get for craving light summery desserts during the cold, dreary, winter months.  So anyway, I was having a hard time thinking something up until I got the reminder email and it said the cream didn't have to be literal, it just had to be a creamy ingredient.  I got to thinking frosted cookies would be easy. So I searched for cookie recipes and saw oatmeal cookies that had peaches in them and then I saw the idea of blueberry and oatmeal cream pies on Pinterest and thought I could replace the blueberries with peaches. 

Peaches & Oatmeal Cream Pies

  • 4 ounces unsalted butter, room temp
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 & 1/2 cups oats
  • 2 medium peaches, diced, divided
  • 2 oz cream cheese
  • 2 tablespoons butter
  • 2 cups powdered sugar
  • 1/4 teaspoon vanilla extract
Cream butter and sugars till light and fluffy. Add egg and vanilla. Mix in flour, salt, and baking soda. Mix in oats. Reserve 1/2 cup diced peaches and set aside, carefully mix remaining peaches into batter.Wrap cookie dough in plastic wrap & refrigerate a few hours.Drop small scoops of cookies dough onto cookie sheet and bake at 350F for 10-15 minutes. Let cookies cool. While cookies are cooling prepare frosting. With electric mixer beat together reserved peaches, cream cheese 2 tablespoons butter, powdered sugar and vanilla extract, until smooth.  Put a scoop of frosting between two cooled cookies.

  4. Peaches in the cookies and peaches in the filling...SO yummy! I love oatmeal cream pies and can only imagine how incredible this peach version tastes!

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam. Hopefully, I can reduce the amount of spam and turn the word verification off soon.
