Muffin Mix Scones

I'm all about easy. I've discovered there are a lot of things you can do with mixes. Don't get me wrong, there is nothing wrong with making something from scratch. The results are always worth it. But, every once in a while there are times you want or need to throw something together quickly and easily. I've always known you could do a lot with a box of cake mix and I've been discovering you can do a lot with those little bags of muffin mix that just call for milk. It's true, most of the time they have recipes right on the back of the bag. One time I came a cross a bag with a recipe for scones. Easy scones from a muffin mix, awesome. All you have to do is substitute the milk with sour cream. It makes the dough dryer and crumbier, the perfect scone texture.

Muffin Mix Scones
Scone:
  • 1 small package just add milk muffin mix (any flavor will do) 
  • ½ cup sour cream
Glaze:
  • 1 cup powdered sugar 
  • 1 Tbsp milk, orange juice or lemon juice (depends on the flavor of the scone)
  • 1/2 tsp vanilla (I would recommend leaving out the vanilla if you use orange or lemon juice)
Preheat oven to 400°F. In a medium bowl stir muffin mix and sour cream until it forms soft dough. Place dough on a lightly floured surface and pat in to a 6” circle. Cut into triangles using a sharp knife. Place 1” apart on a lightly greased baking sheet. Bake for 14 minutes or until golden brown. Remove from oven and let cool 10 minutes. In a small bowl combine ingredients to make glaze. Drizzle scones with glaze. Serve warm. Yield 6.
*I've never tried this with Jiffy Brand muffin mix, but I image it would work too as long as you add the egg.

  6. tysm for posting you have no idea how much this just saved the day!!! also tysm for explaining WHY the sour cream is necessary....i would've otherwise omitted and ruined these for sure!!

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam. Hopefully, I can reduce the amount of spam and turn the word verification off soon.
