Microwave Brownie Sundae

A while back my grandma gave me a recipe for a 5 minute microwave chocolate mug cake. What a clever and dangerous idea. A small, single portion, sweet treat that can be made in 5 minutes. Well, if you've been on pinterest you've probably noticed that microwave desserets are popping up all over the internet. By far the most dangerous thing I've seen is this microwave brownie. 6 ingredients and it doesn't even use eggs? I'm already a sucker for brownies and this one is so stinking easy to make. It's even quicker to throw together than my Grandma's microwave cake. I'll have to admit its not the best brownie I've ever eaten, but it is still good and it's perfect with ice cream. Now, a lot of these microwave desserts are advertised as an individual portion. I find that they tend to be big portions! I'm sure some people have no problem eating the whole thing with out help, but I usually split them in two so hubby gets one as well.

Microwave Brownies
  • 1/4 cup flour
  • 1/4 cup packed brown sugar
  • 2 Tbsp unsweetened cocoa powder
  • Pinch salt
  • 2 Tbsp canola or other mild vegetable oil
  • 2 Tbsp milk, coffee or water (I used milk)
  • 1 handful of chocolate chips (optional and not even called for in the original recipe, but highly recommended)
In a small bowl mix together the dry ingredients until no lumps remain. Add in the oil and milk so that you have a thick paste. Divide among 2 microwave safe ramekins or mugs.

Microwave each brownie separately for 30 seconds. (They will cook more evenly if you do them one at a time) If the brownie is not done after 30 seconds microwave it for an additional 15-30 seconds; it will be done when it’s springy on top but still a bit gooey. Top with ice cream, chocolate syrup, nuts, etc.
Since you can't even see the brownie in the other picture under all the ice cream, here is what the brownie looks like with just a little chocolate syrup on top. Although, these ones were in the microwave a little too long.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
