I hope everyone is enjoying the holiday weekend. We took baby on his first trip to the zoo this weekend. Today, is going to be a lazy relaxing day at home and for relaxing days I don't always enjoy spending hours slaving over a hot oven so I'm posting an easy dish, great for lazy days (I've also tried this in a crockpot and it works great.) This is one of those dishes my mom made when I was growing up that I just loved. I still love it and I'm not sure why I don't cook it more often because it is ridiculously easy.
Picante Chicken
- 4 Chicken breasts
- 1 jar Picante Sauce
- 1 lb cheese, Monterey Jack, Mozzarella, and Cheddar all taste great. I used pepper Jack.
Heat oven to 375°F. Pound chicken breast flat. Using half
of the cheese, cut the cheese into strips. Lay strips evenly onto chicken breasts
Roll Up Chicken
Pour small amount of Picante Sauce into bottom of 8” x 8”
cooking dish. Place the rolled chicken in dish. Pour Picante sauce over
chicken. Cook for 30 minutes or until chicken is cooked thoroughly. Grate remaining cheese and sprinkle on
chicken. Heat for 5 more minutes, until cheese is bubbly.
I like to serve with Tortillas chips to eat all the extra cheesy goodness in the pan.
