Cinnamon Apple Bread

Okay, I guess I lied. I said I was almost out of apples so you wouldn't see any more apple recipes for a while. At least this one isn't a caramel apple recipe. Don't think I didn't try to add caramel to it though. I get theses daily recipe emails from different websites. I got one from Betty Crocker for Caramel Glazed Apple Bread. I checked out some of the other apple bread recipes on Betty Crocker and came across this recipe too. The two recipes were very different. I liked the idea of the flavors from the first one, but I liked the mix of ingredients (and the reviews) from the 2nd recipe better. In the end I ended up with a recipe that was a hybrid between the two. Unfortunately, I didn't have enough brown sugar to do the caramel glaze so I decided to just do a cinnamon streusel on top. I knew I could substitute regular sugar more easily in the streusel than the caramel, although I would recommend using brown sugar in the streusel too, if you have it.

Cinnamon Apple Bread
Bread:

  • 1 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/2 cup apple sauce
  • 2 eggs
  • 2 cups apples, chopped and peeled
  • 1/4 cup buttermilk or milk soured with lemon juice
  • 1 teaspoon almond extract (optional, you could add 1/2 cup nuts too)
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon

Topping:

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

For bread mix 1 cup brown sugar, oil apple sauce and eggs together. Mix in apple, milk, and almond extract. Add flour, baking soda, baking powder, salt, and cinnamon. Divide among two large greased loaf pans or 6 mini loaf pans.  For topping Mix 1/2 cup flour, 1/4 cup brown sugar, butter, and cinnamon together with a fork until crumbly. Sprinkle over the bread loaves. Bake at 350 for 35-45 minutes or until toothpick inserted in centercomes out clean.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam. Hopefully, I can reduce the amount of spam and turn the word verification off soon.
