I don't think this recipe is any secret. It's your basic cake mix mixed with pudding mix cake. Today, this recipe is actually brought to you buy my hubby. He made it for my birthday a few weeks back. We decided that this cake tastes especially great topped with strawberries and whipped cream.
Lemon Pound Cake
- 1 box yellow cake mix (we actually used lemon cake mix)
- 1 small package lemon instant pudding mix
- 1/2 cup vegetable oil
- 1 cup water
- 4 eggs
- Lemon Glaze (optional, recipe below)
Preheat oven to 350F. Mix all ingredients together with electric mixer on medium speed for 2 minutes. Pour into 2 greased bread pans or a greased bundt pan. Bake 40-45 minutes until tooth pick inserted into middle comes out clean. Remove from pans and cool on wire rack.
- 2/3 cup powdered sugar
- 2 Tablespoons lemon juice
Mix together and poor over hot cakes.
