Honey Caramel Apples

We didn't watch BYU trample all over ISU (we only got to see the last 2 minutes), which means I didn't make any delicious party food. We did have family in town and spent the afternoon at a corn maze/fall festival.  I kept up the fall them going and made some caramel apples for my family. I used a recipe I found on Our Best Bites last fall. The recipe uses whipping cream and honey and it works like a charm.  Because of the honey, it has a little bit different of a flavor than caramel normally has but it is still some tasty stuff. I really like the honey flavor it brings. Also,the fact that it so easy is such a pro that I don't mind the different flavor at all. Besides we covered it with candy and that certainly helped hide the honey flavor. I would certainly make this stuff again, but maybe next time I'll try a more traditional caramel just to see how hard it really is.


Honey Caramel Apples
Recipe by Our Best Bites
  • Small apples. chilled in the fridge for at least 1 hour
  • Equal amounts honey and heavy whipping cream
  • 1 pinch salt 
  • 1 tsp vanilla extract
  • Crushed candy or nuts (we used crushed Reeses Pieces and Heath Bits.)

In a large sauce pan over medium heat,  whisk together cream, honey, and salt. Bring to a rolling boil. Reduce heat to a simmer  Stir and scrape sides of pot down occasionally until a candy thermometer reaches about 260 degrees.
While caramel is cooking wash and dry apples then and skewer them with a popsicle stick or bamboo skewer. Place in the fridge until ready to use. Line a baking sheet or cutting board with waxed paper or parchment paper and set aside.
When caramel has finished, remove from heat and let cool for 5 minutes, stirring occasionally.  Dip apples in caramel, roll and twirl apples to evenly coat.  Let excess drip off and and then if desired roll in candy. Then place on prepared sheet. Let the caramel set and then enjoy! (You can of course refrigerate to help the caramel set faster.)

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
