Tuna Sandwich

As a young stay at home mom with only a toddler that still doesn't have enough teeth to chew up a lot of foods I find I still eat like a single college student, at least for lunch. This is one of those recipes I learned during the college years that is both easy and inexpensive. It's by no means gourmet food, but it gets the job done when you need to make a quick and easy lunch.  It's nice because it's a warm tuna sandwich. I'l be honest, I love nice cold tuna salad sandwiches, but not in the middle of winter. A nice warm sandwich is great on a cold day, and this is a good way to make one out of tuna.

Tuna Sandwich
  • 1 can tuna
  • 1 egg
  • 1 tablespoon flour
  • 2 slices of cheese (optional)
Drain tuna. Combine tuna, egg and flour. Mix well.  Drop a scoop of tuna mixture in a lightly greased frying pan, heated to medium heat. Spread out tuna so it is shaped like a patty. Cook for a couple of minutes and then flip over and top with cheese. Cook until tuna is cooked through and cheese is melted. To help cheese melt faster, put a lid over the pan.  Top sandwich with tartar sauce (In my case miracle whip and pickle relish).

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam. Hopefully, I can reduce the amount of spam and turn the word verification off soon.
