Banana Pancakes with Peanut Butter Syrup

Last week I shared a recipe for scones. This week it's banana pancakes and I've got another tasty breakfast post lined up to share next week too. With a new born in the house it seems as though the only time I have to  cook is Saturdays, when hubby is home. This makes for nice breakfasts, but dinner during the week is lacking.  Anyway, have you ever pinned something on pinterest several times without realizing that you've been pinning the same thing over and over again. These banana pancakes are one of those pins.  The first for of 5 times I re-pinned it, the original pin was from How Sweet It Is. The last time I pinned it, the pin was from Six Sister's Stuff. By the 10th time you pin it you realize it's time to try the recipe, especially if more than website approves of it's deliciousness.  I had bananas that needed used (a very common situation in my house) so I made these pancakes. I approve and my 2 year old does too. The are nice heavy pancakes so one batch can go a long way.  I opted to try and make a peanut butter syrup instead of using the Vanilla glaze the other two websites used.

Banana Pancakes
  • 2 cups whole wheat pastry flour (I've used all purpose flour before and it works just fine!)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2/3 cup milk
  • 1 tablespoon vanilla extract
  • 3 large ripe bananas, mashed
  • 2 tablespoons butter, melted
In a large bowl, combine flour, baking powder, sugar, salt, cinnamon, and nutmeg in a large bowl. Measure out the milk and add the vanilla extract to it. Whisk together the dry ingredients and add in milk and vanilla, stirring to combine. The mixture will still be dry. Add in mashed bananas and mix. Add in melted butter and stir until batter is somewhat smooth.

Heat a skillet or grilled on medium heat. Using a 1/3 cup measure, spoon batter into rounds and cook until bubbles form on top – about 2-3 minutes. Flip and cook for a minute or two more. Repeat with remaining batter. Serve hot with butter and syrup.

Peanut Butter Syrup
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/3 cup peanut butter

Combine sugar, water, salt and peanut butter in small saucepan. Bring to boil, then cook uncovered over low heat for 5 minutes. Stir occasionally. Cool.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
