Lemon Bars


The other day I was telling my mom about how I made one of her cookie recipes and everybody just loved them and my mom said "Yep, that Betty Crocker sure knew how to cook." I had  no idea the recipe came out of the Betty Crocker Cook book but I agree, she did know what she was doing. Seriously, who doesn't own a big red Betty Crocker Cook book.  Because she did know what she was doing, when I was craving lemon bars yesterday I knew exactly where to turn.  I remember that I used to buy the boxed mixes for lemon bars, but then I discovered the recipe in Betty's cookbook and realized they are super easy to make from scratch and they really don't use a lot of ingredients.


Lemon Bars
Crust
  • 1 cup flour
  • 1/2 butter softened
  • 1/4 cup powdered sugar

Mix all ingredients together and press into the bottom of a square pan. Bake at 350F for 20 minutes remove from oven.

Filling

  •  1 cup sugar
  • 2 Tablespoons lemon Juice (or lime juice tastes good too)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Salt
  • 2 large eggs

Mix all ingredients together on high for 3 minutes until mixture becomes light and fluffy. Pour over hot crust. Bake for 25-20 minutes at 350F until no indentation appears when lightly touched. Cool on wire rack and dust  with powdered sugar.
Makes 25 servings, 95 calories a serving.

  2. I don't have a Betty Crocker book - the more classic tome here in New Zealand is the Edmonds Cookbook. I do however know a very naughty Betty Crocker joke - hmmm!! Anyway, I love anything lemony and this looks like a recipe I'd really like.
