Blender Salsa

When we grew our garden this past summer we had a lot of tomatoes We ate a lot of salad (we had a lot of lettuce too. We ate a lot of BLTs. We made fried green tomatoes. I canned tomato sauce. And, the other lady who worked on the garden showed me how to make salsa. No this is not green tomatillo salsa, our tomatoes just happened to be yellow so it gives the appearance of salsa verde. It really is tomato salsa. We made it by chopping nearly liquefying all the ingredients in a food processor.  You could also dice it by hand so it's a chunky salsa. It really doesn't matter. We just had a ton of very small tomatoes, like cherry tomatoes and yellow pear tomatoes. Who wants to chop all of those by hand? You can also water bath can this salsa (about 10 mins low altitude?) I didn't can any though. I only took a few jars worth home so I just froze a couple of jars.  This stuff really is great. I know I've mentioned I'm a chips and dip lover so I could be a little biased, but my husband isn't really a chips and dip guy and he could probably down a whole jar of this by himself in one sitting.

Blender Salsa
  • 5 lb Tomato
  • 1 bushel cilantro
  • ½ - 1 large onion
  • 5 -6 cloves garlic
  • 9-10 roasted jalapeno peppers
  • Salt to taste
Mix all ingredients together in batches in a blender or food processor.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
