Mac n' Cheese


I saw this Mac n' Cheese on Guy's Big Bite. I've watched that show all of like twice ever, but I'm glad I saw this episode. Guy had on guest, Ed Wilson who Guy originally met on Dinners, Drive-Ins and Dives. Ed Wilson has a BBQ restaurant. Guy and Ed made some pulled pork and Ed Wilson showed us how to make the mac' n cheese from his restaurant. Apparently it's a big seller. I'm always on the look out for a good mac n' cheese recipe so I thought I'd give this one a go. I'm glad I did it was delicious. I certainly didn't put as much cheese in it as the recipe calls for and it was still delicious. I'll definitely be making this stuff again.


Wilson's Own Mac n' Cheese
Ed Wilson - Guy's Big Bite
  • 2 quarts water
  • 1 tablespoon kosher salt, plus more for seasoning
  • 1 tablespoon vegetable oil
  • 2 cups uncooked elbow macaroni
  • 2 eggs
  • 1 1/2 cups (1 12oz. can) evaporated milk
  • 1/2 stick butter (1/4 cup), melted
  • Freshly ground black pepper
  • 16 ounces shredded sharp Cheddar (I probably only used about 8oz )
  • Dust with paprika
Preheat oven to 325 degrees F. Bring water, salt, and oil to boil over high heat. Add pasta, bring back to a boil and cook until al dente, 8 to 9 minutes. Drain pasta and rinse with cold water to stop the cooking process. In a large bowl, mix together eggs, evaporated milk, melted butter and salt and pepper. Stir in 3/4 of the cheese and add the pasta. Spray an 8 by 8-inch baking pan with nonstick spray and add the pasta mixture. Top with remaining cheese and dust with paprika. Bake until the cheese is golden and bubbly, about 30 minutes. Serve hot.

  3. Oh, man, that looks sooo good! I could just take that whole thing and a fork and be blissfully happy. :) I looove me some good mac and cheese but I hardly ever get it since the hubs is lactose intolerant and the little man hates cheese. Waah. Thanks for sharing at Shine on Fridays!!
