Pumpkin Chocolate Chip Cookies

So the big move is coming up soon. We close on our house Friday, we receive possession of our house Saturday evening and out storage pod will be dropped off the following Monday and then it will be a crazy week as we get the house cleaned up, unpack, celebrate little boy's birthday, run a 5k on Thanksgiving and or course enjoy and lovely Thanksgiving dinner with my family.  In the meantime, I have a recipe to share with you today and if I don't forget during the chaos of next week, some stash-busting yarn projects.

So, I stopped by King Sooper's a few days after Halloween and in their little Manger's Special/Clearance section there was a shopping cart full of bags of chocolate chips for about 75 cents a piece.  They were Halloween Chocolate Chips. Each bag was a mix of semi-sweet chocolate chips and orange colored white chocolate chips. With the prices that low I stocked up on a few bags.  I then headed home and decided they would be perfect for pumpkin chocolate chip cookies, so I used up one bag and made some very tasty cookies.

I love this pumpkin chocolate chip recipe and it's been so long since I've made it I forgot how good it is.  I got the recipe in college from a girl in one of my French Classes. She made a batch to share with the class and everyone loved them. I would guess that 3/4 of the class asked her for the recipe so she printed out copies and handed them out the next class.   Some notes on the recipe. You don't have to use applesauce, you can use oil, but I prefer it with apple sauce. The recipe is huge. I made about 7 dozen cookies and I believe my cookie scoop is a 1 Tablespoon sized scoop. The cookies freeze pretty well. They kind of stick to each other a little bit when they thaw out, so I would say they freeze great if you don't require your cookies to be perfectly pretty.

Pumpkin Chocolate Chip Cookies

Cream together:
  • ½ cup butter
  • 3 cup sugar
Add:
  • ½ cup applesauce (or oil) I prefer applesauce
  • 2 eggs
  • 2 cups pumpkin (not pie mix)
  • 2t. vanilla
In separate bowl mix:
  • 5 cups flour
  • 2t. baking powder
  • 2t. baking soda
  • 2t. cinnamon
  • 1t. salt
Mix dry mixture and pumpkin mixture together,
Stir in:

  • 2 cups chocolate chips I like a mix of semi-sweet and white chocolate

Drop on greased cookie sheet. Bake at 375°F for 10-12 minutes.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
