Easy Banana Cream Pie Bites

So funny story, at least you might think so if you're Mormon. I teach the 12 and 13 year old Sunday school class at church. Every once in a while I make them a tasty treat. Saturday I was thinking it has been a while since I brought them anything. I thought about what I could make and came up with these tasty little banana cream pie bites.  Sunday morning came along and Hubby said, "It's fast Sunday isn't it?" I responded, "Yep....Aw dang it. I made treats." If you're not Mormon let me explain. The first Sunday of  every month we fast, which means no food for about 24 hours. Bringing the treats was out of the question. I guess hubby and I will just have to eat them ourselves.What a shame! Anyway these little guys are delicious and super duper easy too.
Banana Cream Pie Bites
  • 2 uncooked pie crust - Use your favorite recipe
  • 8 oz Neufchatel or Cream Cheese
  • 1small box banana or banana cream pie flavored instant pudding mix.
  • 1 1/2 cups milk
Roll out the pie crust and cut out small circles using a cookie cutter or cups. Put circles of dough into mini  muffin tins. Bake 7-8 minutes at 400F. In a large bowl beat cream cheese with mixer until smooth. In another bowl. Whisk together milk and pudding mix. Slowly beat pudding mixture into cream cheese until smooth. Drop spoonfuls of filling into crusts. Keep chilled. Enjoy. 
I made 23 using one pie crust, but I had plenty of filling leftover that I could have easily made another crust to fill up another pan.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
