Carnival's Chocolate Melting Cake

Happy New Year! For my first post of the new year I've got something extra tasty.
The hubby and I went on a cruise for our honeymoon. On this cruise we were introduced to Chocolate Melting Cake. If you've been on a Carnival cruise, you know what I'm talking about. We loved it so much that my hubby searched for the recipe online and found in a deep dark corner of the internet a recipe claiming to be the real one, but it was for mass amounts of people. So he found an online converter and decreased the recipe for two people. Well, some of the ingredients didn't divide quite right and tablespoons were rounded and as delicious as it was it never baked into the right consistency. I hoped on the internet with a mission to find the recipe again. To my surprise I found that Carnival shared the recipe here. The recipe makes 6 cakes. I'm going to share the full recipe with you so you can impress at a dinner party sometime.  However, my husband and I don't need six cakes so I decided to decrease the recipe into a smaller version. Unfortunately, 7 eggs doesn't divide very well, but I managed to make it work. So if you scroll down past the full sized recipe you'll find a smaller version great for 2 people.

Carnival's Chocolate Melting Cake yield 6
  • 8 oz. semisweet chocolate
  • 1 cup (2 sticks) butter
  • 7 eggs
  • 6 tablespoons sugar
  • 1/2 cup flour
Preheat oven to 375 degrees. Melt chocolate and butter; let cool 10 minutes.  In separate bowl, mix four eggs with sugar and whisk.  Add flour and whisk. Add remaining three eggs and whisk.  Add egg mixture to chocolate mixture. Pour into individual ramekins. Bake until just done, about 15-20 minutes, just until the top looks cooked across. Leave it in too much longer and the middle will over cook (mine were perfect after 16 minutes, interior will be melting). Sprinkle with powdered sugar and if desired serve with vanilla ice cream.
Update: I  moved and got a new oven. When I tried to make this and it just didn't bake right. I discovered that it bakes much better if I increase the temperature tp 400F and decrease cooking time 2 or 3 minutes to about 12-13 minutes.

We went on a cruise with my in-laws several years back and I do not exactly what you are talking about :) My hubby just asked me if I could make this for his Dad on his birthday - he's excited too!   10. yes...I have eaten this on the cruise!! I also came home and tried to make it..I added Hersheys syrup and kind of tried to make my own recipe...it was way too runny. now I know the true recipe! thank you...I never considered looking for it?!
