Apple Cinnamon Stuffed Pancakes

Here is an idea if your looking for something to make for your family for breakfast over the weekend. This is another pinterest inspired recipe.  I saw these Apple Rings on pinterest and thought they were pretty much genius, so when I went to make breakfast last Saturday and actually had apples in my house I knew exactly what to make. I didn't read the original recipe at all and figured I could make it up and they turned out great. I also decided not to make them rings, even though my apple slices were rings. I like pancakes a lot and decided to fill in the holes in the middle so I could get a little more pancake. These little pancakes were pretty tasty and   the hubby and I decided that they would be delicious topped with a little whipped cream and some caramel sauce.

Apple Cinnamon Stuffed Pancakes
  • Pancake batter (from scratch, from a mix, whatever tastes best to you)
  • Ground cinnamon
  • Apples
I'm not giving any quantity recommendations because it's really up to how many people you are feeding and this definitely something that doesn't require exact measurements to work. Mix cinnamon into pancake batter. Slice apples horizontally into thin slices. Use a very small round cookie cutter (or the back of an icing tip, in my case) to punch the core out of the apple slices.  Dip the apples in the pancake batter and place on a greased, hot griddle. Fill in the holes in the middle with extra pancake batter. Cook until the bottom is golden brown. Flip pancake over and cook until the other side is golden brown too. Enjoy!

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam.
