Peanut Butter Cake Filling

So my post is out a little late today. My house got hit with the stomach flu hard and blogging hasn't been at the top of my priorities. Neither, has cooking or cleaning, or really doing anything. So, it's a good thing I have a stock pile of blog posts ready to go, I only have to hit publish.

 I had the opportunity to make a friend a birthday cake. She said she liked chocolate cake. I decided I needed to make it a little more special than just a chocolate cake. I remembered that years ago when I was in college I bought a cake mix kit that came with mike peanut butter filling and some peanut butter to make a pretty design on top. Now, I wasn't about to go and but a cake kit. I did use a chocolate cake mix but I figured I could make a filling myself. I also figured I could use peanut butter from a jar to make the design on top ( in hindsight I probably should have warmed it up a little bit so it would have come out of the decorator bag a litlle easier and smoother. Any way: This is what I came up with for a peanut butter filling: (And, I unfortunatly didn't get a picture of a slice so you could actually see the filling.)

Peanut Butter Cake Filling

• 1 cup peanut butter
• 2 oz cream cheese, softened
• 1/4 cup powdered sugar
• Milk

Mix peanut butter, cream cheese and powdered sugar together until smooth. Mix in milk until filling becomes an easily spreadable consistency.
