Baked Brie

BYU, that was a close one. Thank you for winning that last game. For this game we enjoyed some baked brie. This is not your average football party food, but we've been craving it so I decided to make it for the game. It's probably more appropriate for a wedding shower or something along those lines.  I saw this recipe posted on Chef in Training a few months back. It looked so delicious that I made it within a couple of days and let me tell you, it is as delicious as it looks.  Well, I know mine isn't all that pretty, so I urge you to go check out the recipe as found on Chef in Training. There you can see how beautiful it is supposed to be, because hers looks much better than mine does. That's because I adapted the recipe for a smaller size since it's just me and my hubby and a wedge of cheese doesn't keep shape as well as a cheese circle.

Baked Brie adapted from Chef in Training
  • 1/2lb wedge brie cheese
  • 1/4 cup brown sugar
  • 1/3 cup chopped pecans
  • 1/3 cup craisins
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
Preheat oven to 350F. Place cheese in an oven safe dish with sides. Sprinkle and lightly pat 1/4 cup brown sugar onto the cheese. Place chopped pecans onto a cookie sheet. Place both the cheese and pecans in the oven.  Bake for 7 minutes and remove pecans from the oven. Continue to bake the brie for another 7 minutes, until cheese is soft. While brie is baking mix 2 tablespoons brown sugar and maple syrup in a microwave safe dish. Microwave on high 30 seconds.  Pour pecans, craisins, and maple syrup mixture over the baked brie. Serve with crackers or bread.
