Garden Veggies and a Garden Quiche

My husband and I had a chance to garden this year. You see we live in duplex with hardly any yard so that just isn't something we normally get to do.  However,  there is an elderly lady at church with a garden plot the size of small house.  Her health hasn't been very well the past couple of years and she can no longer maintain the garden herself.  She doesn't like to see this very productive, composted garden plot go to waste so she lets a few people garden there. We were some of the lucky ones.  It's been nice. I can hop on my bike and ride to the garden when its my turn to water and of course we get lots of produce when the garden is the size of a house.  On Monday we went to water and we brought home 4 heads of lettuce, a lot of tomatoes in several varieties, carrots, zucchini, squash and a couple of peppers. We made a delicious salad for lunch.
And we still had a huge surving platter overflowing with veggies.
So far I've made chocolate zucchini cake

and a delicious little tomato and bell pepper omlette

Last night I made a quiche. Ignore the fact that it looks like a pizza, because it's a quiche. Also ignore the fact that the crust is kind of ugly. I don't think I had enough flour in it so it didn't hold shape very well. It was delicious none the less. 

Garden Quiche
  • One uncooked pie crust
  • 1 small  zucchini
  • 1small yellow squash
  • 4 cloves garlic
  • 2 green onions
  • 2 Roma tomatoes
  • shredded mozzarella cheese
  • shredded Parmesan cheese
  • 4 eggs (I was filling a 9 inch pie pan)
  • 1/2 cup milk 
Put pie crust in a pie pan. Preheat oven to 375F Chop zucchini, squash, garllic and green onions and saute in little oil for 4 minutes. Pour sauteed veggies into the pie crust. Top with a generous layer of mozzarella cheese. Slice the Roma tomatoes and layer over the mozzarella cheese. Sprinkle with the shredded Parmesan. Mix the eggs and milk together and pour over the vegetables and cheese. Bake for 40 minutes or until eggs are set.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam.
