Salsa Verde

I'm happy about sharing this post because it is a funny story. Okay, I think it's funny. We worked on that huge garden this year and when I say huge I mean huge. With a garden as big as ours was, it is impossible to pull every weed. This kind of turned out to be a good thing in the end, (but was still probably a bad thing at the beginning of the season). We had this funny looking weed growing all over the garden. It blossomed little yellow flowers and then the flowers turned into funny looking pods. I'm seriously thinking Little Shop of Horrors. They almost seemed like a plant that was supposed to be there. There were a couple of places that this weed was growing out or control so we hacked them down with hoes. As it turns out, these weeds weren't really weeds. They were plants, but they weren't something we planted either.
They were Tomatillos. Apparantely, someone with a nearby garden grows Tomatillos and they spread very, very well and ended up in our garden, and in our case they seemed to grow a little too well. We tore them out on  several occasions. Had we know that they were Tomatillos and not weeds, we probably would have kept a few more of the plants arounds. We didn't get a lot of Tomatillos because we did weed so many of them out of the Garden, but I did manage to get enough to make a few cups worth of Salsa Verde. Yumm

Salsa Verde (Tomatillo Salsa)
  • 1 lb tomatillos, husked
  • 1/2 cup finely chopped onions
  • 2-3 chopped jalapeno peppers 
  • 1-2 cloves minced garlic
  • 2-3 tablespoons chopped cilantro
  • 2 tablespoons chopped oregano
  • Salt to taste
  • 2 cups water
Combine all ingredients in a sauce pot. Bring to a boil over high heat. Simmer 15 minutes until tomatillos are soft.  Using a blender or food processor carefully blend the the mixture in batches until smooth.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam. Hopefully, I can reduce the amount of spam and turn the word verification off soon.
