Roasted Garlic Parmesan Mashed Potatoes

We made some ribs the other day and I wasn't feeling in the mood for traditional BBQ sides like potato salad or coleslaw, so I decided to try my hand at some garlic mashed potatoes. It was perfect, because ever since I saw this tutorial on how to roast garlic on Our Best Bites I've wanted to try roasting some garlic. It's easy and added a nice flavor to my mashed potatoes. Since I had some Parmesan Cheese I decide to throw some of that in it too.


Roasted Garlic Parmesan Mashed Potatoes

  • 6 Large Potatoes
  • 1 head garlic
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/2 cup grated Parmesan Cheese

Peel potatoes. Boil potatoes in a large pot until potatoes are soft. While potatoes are boiling roast garlic. Combine potatoes, garlic, sour cream, milk and cheese. Mash with a potato masher until creamy. Sprinkle with more Parmesan cheese if desired.
