Mini Muffin Corn Dog Nuggets

One of my favorite memories of going to the mall as a kid is eating Corn Dog Nuggets from the A&W in the food court. So when I saw these corn dog muffins floating around pinterest, I knew I had to give them a try and figured they would make great football food.  I also have fond memories of eating the Cheese on a Stick from Hot Dog on A Stick when Iworked at the mall, so I put cheese in the middle of a few of them. I know they are kind of ugly, because me and cornbread just don't get a long. No matter how much I grease my pan it always sticks. It always sticks bad, so if you have any tips on removing cronbread muffins from a muffin tin I would appreciate the advice.

Mini Muffin Corn Dog Nuggets

  • 1 Box Jiffy corn muffin Mix
  • 1 egg
  • 1/3 cup milk
  • 1 tbsp honey
  • 4 Hot dogs or Cheese cubes
Preheat oven to 400F. Grease mini muffin tin. Mix muffin mix, eggs, milk, and honey. Divide half of the mixture among 20 of the muffin tin wells. Chop each hot dog into 5 pieces. Put a piece of hot dog (or cheese cube) into each of the filled wells. Spoon the remaining mixture over the hot dog pieces. Bake 10-15 minutes or until muffins are golden brown. Let cool 5 minutes before trying to remove corn dogs from pan. (But as I said, don't ask me how to keep them from sticking because corn bread and I don't get along.) Serve with ketchup, mustard, or my favorite, honey mustard.

I'm sorry, but I've turned word verification on again. I hate trying to decipher the words just as much as anyone, but I'm getting way too much spam. I tried doing comment moderation as people suggested but the number or spam comments I had to sift through was ridiculous. I appreciate your comments and didn't want them to get lost among the spam. Hopefully, I can reduce the amount of spam and turn the word verification off soon.
